One of the strategies that I’ve been incorporating into my daily lifestyle has been to add more flexibility into my food habits (while staying structured&healthy). I do enjoy some sugary/junk stuff from time to time, but the impact that these foods have in my mood and energy levels is not a positive one, so I’ve had to come up with my own healthy sweet stuff! These muffins turned out delicious, they are paleo and can be part of a keto diet (no gluten/diary)
Ingredients (for 16 small muffins)
-1/2 cup smooth almond butter
-3 eggs (room temperature)
-2tbsp almond or coconut milk
-1/2 cup erythritol
-2tsp pure vanilla extract
-1tbsp lemon juice
-1 1/4 cup blanched almond flour
-1/4 tsp sea salt
-3/4 tsp baking soda
-1 cup mixed berries
-1/2 cup baking cocoa chips
-Pre-heat oven to 325
-In a mixing bowl, whisk together the eggs, almond butter, erythritol, vanilla and lemon juice
-Add in the flour, baking soda, salt, berries and chips. Mix well.
-Bake at 325 for 18-20 min until tops are browning.
-Once cooled, serve and enjoy!
